ANGEL FLORES DINNER

For a quick impromtu BBQ this dinner came together really well.

BLISTERED BROCCOLI:

Marinade the broccoli with lemon juice, parmesean cheese, S&P and a bit of olive oil. Simply charr them up on a ripping hot grill.

BANANA LEAF WRAPPED SALMON:

Layer a couple slices of lemon in the banana leaf, then the salmon. I dusted the fish with strawberry hibiscus sea salt and fresh cracked black pepper and a tiny pat of butter. Wrap 'em up and steam them on the grill.

GRILLED HOMEMADE MAC AND CHEESE:

I think this is my favorite thing to cook for kids. I had a very special helped last night, my friend's daughter Paisley. I really love teaching people how to cook, especially children. Knowing how to feed yourself well is not only good for your diet, but it is also so liberating!

Start with a rue, butter and flour. Whisk in the milk or heavy cream. Season with salt and pepper and my favorite addition some Mexican hot sauce. Get that good and creamy and then slowly incorporate the shredded cheese. My preference is sharp cheddar and chihuahua and a bit of parm. Dump in the par cooked elbow pasta.
