SMOKED PORK SHANKS

Oh yeah, Pork Shanks! After rubbing these guys down and resting them overnight I smoked 'em for 7 hours at 220F. Served with cheddar cornbread muffins.

After we had our fill, I simmered the bones with carrots, celery and onions for a stock. Turned that into Split Pea Soup. We have lift off!
